Sunday afternoon lunch, St. John-like. Fresh mango from Coral Bay Garden Center, corn, red pepper, jalapeno, green onion, garlic, cilantro and lime.
Boil the corn, just for a couple of minutes....
Drain and roll around in olive oil...
Grill corn for a few minutes to sort of roast....
Chop up everything else, about the same size except for jalapeno and garlic. Teeny mince those...
Dice mango slightly larger...
Cut corn from cobs and add...
Mix it all together, add lime juice, a touch of oil, and generous salt and pepper.
Then the hard part. Refrigerate for at least a couple of hours.
Mango salsa and chips. Sunday lunch!
