Orange-Soy Short Ribs


I do love short ribs. Here with an orange juice and soy sauce marinade and glaze.


A couple of pounds of beef short ribs...


One cup of orange juice, a quarter cup of soy sauce, some time and some garlic...


Ribs nestled into marinade and refrigerated overnight...


Remove from marinade and pat dry. Save the marinade...


Give the ribs a good browning...then remove from pan.


Put the marinade in the pan and bring to a boil...


Put ribs back in and add enough vegetable stock to come up the ribs about half way.


The cover and put in a 300-degree oven, undisturbed, for three hours.


Remove and let the ribs cool a bit...


And now take that pan, fat and all, and boil it down to a thick, orange-y soy sauce-y syrup.


Spoon the glaze over the ribs and run under a broiler for just a couple of minutes...


A little toasted sesame seed and orange zest. Short ribs with sweet potato puree. Dinner.
