Asparagus spaghetti



Our friend Jim set us up with more of his outstanding pesto, arugula this time, so we need new ways to enjoy it.




I bought this thing at a kitchen gadget store years ago even though I had no idea what it was. It sat in the drawer unused for years until I recently saw Marc Matsumoto use it to slice up asparagus. It's called a Negi Cutter.

With the Negi cutter run the length of each stalk, stalk rotated a quarter of a turn and the Negi cutter run down the length again.



And I ended up with a pile of asparagus "spaghetti."



Tossed in boiling water for a couple of minutes...



And drained. It's limp just like spaghetti.



Tossed with some of Jim's pesto (he is not shy with the garlic.)



Asparagus spaghetti and pesto. With shaved Parmesan and a grilled cheese sandwich. Lunch!
