Cheese puffs

Fun little mouthfuls of air made with a dough that has water in it, making steam when they bake so they're sort of hollow inside.

4 tablespoons of butter...

Melted with a 1/2 cup of water...

Then a 1/2 cup of flour whisked in...and cooled for a bit.

Some grated Gruyere cheese...

Some cracked black pepper and some fresh, finely chopped thyme.

Two eggs beaten into the slightly cooled dough...

Then the pepper and thyme mixed in...

And then the cheese...

Spooned onto a baking sheet and baked at 350-degrees for about 15 or 20 minutes...

Until browned and puffed up.

Cheese puffs. Great with a little honey or jam.
