Roasted tomato and black bean soup
Russ saw this recipe in USA Today and wanted to try it. I'm always happy to let someone make lunch for me.
Tomatoes, onion, garlic, black beans, cumin, chili powder and cilantro...
Tomatoes and onion quartered and tossed with olive oil, along with garlic, salt and pepper.
Spread out on a baking sheet...
And roasted in a 375-degree oven for 45 minutes.
The roasted vegetables removed...
And mixed with stock and water...
The beans, cumin and chili powder added...
And simmered for 20 minutes.
Then the soup blitzed in a blender...
And a couple of shakes of hot sauce added.
Fresh cilantro and a little sour cream. Roasted tomato and black bean soup. Lunch, thanks to Russ.
