Panko fried chicken
Two gigantic chicken breasts, cut in half. Panko with pistachio! (Whole Foods.)
Season chicken (blindly reach into spice rack, grab 5 jars. Chances are good it's a good mix.) Roll in egg, then panko. Let chicken dry for an hour or so.
Fry in vegetable oil. 10 minutes or so. Two batches in my little pan.
Remove to rack and throw in oven for another 1o minutes.
Panko fried chicken. One piece for dinner. Another, cold, for lunch!
