Chicken with parsnips and carrots

Parsnips are like carrots, yet almost like sweet potatoes. Only they're parsnips.

For the chicken, goat cheese, chopped up sun dried tomatoes, chives...

All mashed together..


and stuffed under the skin of chicken breasts...

Parsnips and carrots in a pan...tossed in olive oil.

Chicken breasts on top. The whole pan roasted at 375 degrees for about 35 minutes.

Looks about done.

Sun dried goat cheese chicken with carrots and parsnips. Dinner.
