Creamed corn with bacon



Corn, bacon, parsley, onion, cream, sour cream and lime.



Corn off the cobs...



Cobs, onion, bay leaf covered with water. Simmered for awhile.



Bacon cut into little pieces...



And fried.




Corn stock strained...



And cook corn (with a touch of bacon fat) in pan with enough stock to cover. Add more stock as needed. Like risotto. Until corn is tender.



Add just a little sour cream, a generous amount of cream...



And parsley and a bit of lime zest.



And the bacon. Simmer for a few minutes.



Creamed corn with bacon!
