Bean and smoked turkey soup



Michael soaks beans. I buy them in cans. I'll soak this time. Overnight. (Great Northern.)



Then simmer on low heat with bay leaf and onion for an hour.



Then add a huge, smoked turkey leg. They're only a couple of bucks at the store.



After another hour, pull out bay leaf, put in thyme. Simmer for a while longer. Flavors building now.



Take out turkey leg and cool. Pull out some of the beans, along with onion, and blend until smooth.



Return pureed beans and shredded turkey to pot, along with diced carrots.




Add just a wee bit of cream and some smokey paprika and simmer.



Bean and smoked turkey soup. Lunch!
