Chicken, with butter beans and arugula
The butter bean is big. It's kind of like a lima bean, except it tastes good.
Rubbed with cinnamon, ginger, paprika, garlic and pepper.
Browned crisp on stove. Finished in oven.
And roughly chopped.
Drain most, but not all, of bacon fat. Add beans and some garlic. Heat through.
Remove from heat. Add arugula...
Toss and wilt.
Chicken with butter beans and arugula. Dinner.
