Blackberry Crème Brulee



Big, fat blackberries.



A vanilla bean, inside scraped out.



All added to 1 1/2 cups of cream and simmered.



Five egg yolks, 2 tablespoons sugar...



Whisked together.



Eggs and cooled cream mixed together and then simmered until...



This thick.



Blackberries in dishes, on kitchen towel in pan.




Custard poured on top.



Water poured on towel. (Fail-safe water bath...no sliding around.) Then baked at 300-degrees until set. 15-20 minutes.




Cooled custards, topped with a sprinkling of sugar and then torched.
