Chicken Pot Pie



I love a good pot pie.



A big, double chicken breast...



Roasted and cooled.




Carrots, onions, celery and tarragon. And frozen peas!



Vegetables sauteed, then a bit of flour and butter mixed in and cooked.




Some stock added...and then a touch of cream.



And then simmered for awhile with the tarragon.



Tarragon removed. Chicken in big chunks and frozen peas added.



Cooked a bit longer.




The divided in dishes and cooled.



Frozen pie crust.



Skillfully cut and shaped onto dishes. Some slits cut in top, then brushed with egg and sprinkled very generously with sea salt. Baked.



Chicken Pot Pie. Dinner!
