Cardamom sweet potato ravlioli

Sweet potatoes, wonton wrappers and cardamom seeds.

Seeds crushed...

Sweet potatoes boiled...

Then mashed, with finely diced scallion and cardamom. Very fragrant.

One wonton wrapper with a spoonful of sweet potato...

Topped with another wonton wrapper (a little water sticks them together.)

And trimmed with a cookie cutter. Awe...cute.

While the ravioli dries for a few minutes....

Make a mushroom cream sauce with mushrooms...

And cream...

And tarragon...also very fragrant.

And a touch of cognac.

Boil raviolis for a couple of minutes.

Garnish ridiculously... and serve. This was SO good!

    my new thing for fall is mashed sweets with chipotles. yum with a kick!
