Mahi Mahi and spinach



A couple of chunky Mahi fillets...



Nonstick pan hot as I can get it. Then fish in, dry. Fast sear.



Taters. Browned up then dusted with a snowfall of parmigiano reggiano, then run under the broiler.



Oil, lots of garlic and some dried pepper hotness...



Then chopped up spinach tossed to heat through...



And plated up like a school lunch. Veggie, protein, starch. Dinner!
