Italian wedding soup

My favorite place for ordering Italian wedding soup doesn't have it on the menu anymore. So, I'll make my own.



An egg, reggiano cheese, parsley...

And some ground beef.

Mixed up.

Tiny little meatballs! (Yes, that was tedious.)

Some stock, lots of water, some vegetables and some simmer time.


And teeny tiny pastas!

And some diced tomato.

Meatballs, pasta and tomatoes in stock. Simmered 'til pasta is done.

Then the spinach.

And simmered until wilted.

Italian wedding soup. Lunch!
